Mousse de saumon


C'est une adaptation d'une recette donnée par Stéphane Bureau, le chef de cuisine du Clos d'Amboise dans le Val de Loire.


Marinez 500 g de saumon dans un mélange de sucre, de sel, d'aneth et de jus de citron (recette ici). Rincez et faire sécher le saumon puis enlevez la peau. Coupez en dés la chair du saumon et mélanger avec une cuillière à soupe de jus de citron, 500 ml de crème épaisse, 250 g de fromage à tartiner, de sel et de poivre. Servez-le en trempette, avec des bâtons de carotte, de poivron doux, de chou rave, de concombre ou de céleri.

  1. I'm not making a comment on the French in your posts, but do you know about the Robert Correcteur? It's a good grammar and spelling checker for French. I like the way it works: you copy your text to the clipboard, open the Robert Correcteur app, and it analyzes the text and suggests improvements and corrections. It's not free, but not overly expensive. I've had it on my laptop for years, and use it fairly often.
